Pumpkin Chocolate Chip Cookies |

250 ml | sugar | 1 cup |
250 ml | cooked or canned pumpkin | 1 cup |
125 ml | shortening | 1/2 cup |
15 ml | orange rind, grated | 1 tbsp |
2 | eggs | 2 |
500 ml | all purpose flour | 2 cup |
5 ml | baking powder | 1 tsp |
5 ml | baking soda | 1 tsp |
5 ml | cinnamon | 1 tsp |
2 ml | ground cloves | 1/2 tsp |
2 ml | nutmeg | 1/2 tsp |
2 ml | ginger | 1/2 tsp |
1 ml | salt | 1/4 tsp |
250 ml | semi sweet chocolate chips | 1 cup |

With electric mixer; mix sugar, pumpkin, shortening, orange rind and eggs until well blended. Stir in in all dry ingredients. Add chocolate chips. Drop by teaspoonful onto an ungreased cookie sheet. Bake at 375 F (190 C) until light brown about 8 to 10 minutes. Cool on rack.Serves 12 |
