Cake Crumb Cookies
2 eggs
1 c. milk - more if needed
5 to 7 c. cake crumbs
2/3 c. brown sugar
1/2 c. butter, melted
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg or allspice
1/2 c. walnuts, chopped
Preheat oven to 350. Crush cake into crumbs in food processor.
Beat eggs and milk; add crumbs. Let stand 15 minutes.
Blend in sugar, butter and vanilla.
Mix together four, soda, baking powder, salt and spices. Add to crumb mixture. Fold in nuts.
Drop by tablespoons on greased cookie sheet. Flatten to 1/3" thick with sugared glass. These cookies do not spread so you can place them close together.
Bake 10 to 15 minutes or until edges are golden.
