Bacon Cheeseburger Meatloaf






Bacon Cheeseburger Meatloaf

2 lbs. ground beef
1/2 c. grated onion
3/4 c. fresh bread crumbs
2 eggs, lightly beaten
1 tsp. black pepper
8 slices American cheese or 1 1/2 c. shredded cheese
6 strips uncooked bacon

Preheat oven to 350.

In a large bowl mix together beef, bread crumbs, onion, eggs and pepper until well combined.

Transfer two-thirds of the meat mixture to 9 x 5 inch loaf pan. Press into pan and up sides so there's a well for the filling.  Fill the center with cheese.  Top with remaining meat mixture pressing sides together to seal the edges.

Layer bacon slices, overlapping slightly, over top of meatloaf.

Bake for 50 minutes. Top with more cheese (if desired) and bake 10 more minutes.

Let meatloaf rest for 15 minutes before serving.

Caution:  Cheese filling is very hot and will ooze from the center when first sliced.
