Classic Meatloaf w/ Red Sauce & Onions
2 lbs. ground beef
1/2 c. grated onion
1 c. fresh bread crumbs
1/2 c. milk
2 eggs, lightly beaten
2 tsp. dried parsley
1/2 tsp. salt
1/2 tsp. black pepper
2 Tbsp. brown sugar
1 Tbsp. dry mustard
1/3 c. ketchup or tomato sauce
1/4 c. thinly sliced onion
Preheat oven to 350.
In a large bowl, mix together beef, grated onion, bread crumbs, milk, eggs, parsley, salt and pepper until well combined. Pack into a 9 x 5 inch loaf pan.
In a small bowl, combine brown sugar, mustard and ketchup. Stir until sugar is dissolved. Add onion; toss to coat and pour over meatloaf.
Bake for 1 hour. Let rest 10 minutes before slicing and serving.
