Zingy Roasted Onions




Zingy Roasted Onions

75 mlolive oil1/3 cup
8large onions, peeled8
-salt & pepper to taste-
25 mlbalsamic vinegar2 tbsp
25 mlparsley, chopped2 tbsp
In 13 x 9 inch (3 L) lightly greased baking dish, drizzle olive oil over onions. Sprinkle with salt and pepper. Cover and bake in 375 F (190 C) oven. Baste every 20 minutes for 1 hour. Uncover and bake for about 45 minutes or until very solft. Drizzle with vinegar and sprinkle with parsley.Serves 8
