Cracker Barrel Double Fudge Coca Cola Cake

Copycat Cracker Barrel 40th Anniversary Double Fudge Coca Cola Cake

makes one large 9 x 13" sized sheet cake

1 (12 ounce) can Coke (or other cola), divided
2 (4 ounces each) sticks unsalted butter (each stick = 1/2 cup), divided, at room temperature
1 (1 ounce) square semisweet chocolate
1 cup miniature marshmallows (measured by volume not weight)
1/2 cup shortening (I used butter flavor Crisco) (measured by volume)
1/2 cup canola oil or sunflower oil
3 tsp vanilla extract, divided
2 cups granulated white sugar or caster sugar
2 large eggs
3/4 cup milk (I used 2% fat)*
3 Tbsp powdered buttermilk*
1 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
2 1/3 cups White Lily all-purpose flour
1 1/4 cups unsweetened dark chocolate cocoa powder, divided
1/4 cup chocolate syrup (I used Fox's U-Bet)
2 cups powdered sugar or icing sugar

Before you begin, open your oven and arrange the baking racks so that one of them is set near the top, making sure there is plenty of room on that top shelf for your pan and for the cake to rise a bit. Normally cakes are baked in the center of the oven, but not this one. Preheat your oven to 350 F. Grease and flour a 9x13" rectangular sheet cake pan.You will also need a small saucepan, a whisk, an electric mixer, and 3 mixing bowls.

Measure out just 1 cup of Coke and just 1 stick of the butter and place along with the square of semisweet chocolate into a small saucepan. Set the remaining cola aside for now, and place the other stick of butter in a medium mixing bowl, setting it aside to come to room temperature.

Meanwhile, bring the mixture in your saucepan to a boil, stirring with a whisk or slotted spoon often. As soon as it boils, add the mini marshmallows, stir to coat, lowering the heat a bit to prevent a boil-over. Continue to stir until everything has fully melted and blended together, and there are no longer any white streaks remaining from the marshmallows. It should look shiny and wet, like unset fudge. Set this fudge mixture aside to cool a bit (I let mine sit for about 5 minutes, then poured it into a plastic bowl and popped it into the fridge for about another 5 minutes while I continued with the next step).

In a large mixing bowl combine the shortening, oil, and just 2 tsp of the vanilla. Add the granulated sugar and mix well. Add in both eggs and the milk and beat well, using an electric mixer, until light and fluffy. Scrape any batter that is creeping up the sides of the bowl with a spatula, as needed.

In yet another mixing bowl (last one I promise!), combine the buttermilk powder, baking soda, baking powder, and salt. Set a mesh strainer/sieve over the top of the bowl and add the flour, shaking the strainer so that the flour sifts down into the bowl. If you happen to have a flour sifter, you can use that instead, but a mesh strainer works just fine. Measure out just 3/4 cup of the unsweetened cocoa powder and sift that through the sieve as well. Remove the sieve and give the mixture a quick stir.

Add half of the flour mixture into the shortening & egg mixture, beating until smooth.

Remember your fudge mixture you have cooling? Give that a quick stir and then add just a bit of it to the shortening mixture and beat well. Continue adding the fudge in small amounts until all of it has been beaten in and well combined. The reason you are adding it slowly is to prevent the still somewhat warm mixture from scrambling your eggs.

Add the other half of the flour mixture now, mixing until combined and then for another 4 minutes. Set a timer. You are trying to incorporate air into your batter, so no skimping on the time here. Your batter should be thick and smooth.

Pour the cake batter into your prepared pan and pop it into the preheated 350 F oven to bake on the TOP rack. Bake for 35-40 minutes, or until a toothpick poked into the center of the cake comes out with no streaks on it. Do not overbake! Set the cake onto a cooling rack to cool somewhat. You will still want it to be a bit warm when you add the fudge icing, but wait long enough for it to no longer be so very hot that your icing just melts completely upon contact. Before you walk away, take your toothpick and poke a bunch of holes all over the surface of the cake.

Remember the bowl with the stick of butter in it from way back in the beginning? By now it should be nice and soft. Go grab the rest of that can of coke and measure out about 1/3 cup. Add that to the butter, along with 1 tsp vanilla, and the remaining 1/2 cup unsweetened cocoa powder. Add the chocolate syrup and mix well until everything is smooth. Now add in 1 cup of the powdered sugar and blend well, then add the remaining 1 cup powdered sugar. The icing should be shiny, smooth, and a bit gloopy, not stiff. It should not be watery, but more like the consistency of thick hot fudge sauce. If it is too thin, add a bit more powdered sugar, or if it seems a bit too dry, add a little more cola.

Pour this entire mixture over the warm cake and spread evenly. Allow this to sit long enough to set up a bit, about 20-30 minutes, roughly. Some of the fudgy icing will ooze into your toothpick holes and you need to give it time to do that. The surface will also take on a sheen and harden ever so slightly. Serve with a scoop of vanilla bean ice cream on the side while the cake is still a little warm, if desired.

*NOTE: If you don't have buttermilk powder, you may instead use 3/4 cup buttermilk instead of the milk and buttermilk powder. Or, you can make a buttermilk substitute by placing 2 tsp. lemon juice into a measuring cup, then adding enough milk to fill 3/4 cup, and then allowing that to sit for 5 minutes to thicken. You will not need to make any adjustments to the dry ingredients.

Wendy's Crock Pot Chili




"Wendy's" Crock Pot Chili


(Use a Large Crock Pot, this makes a lot)
Freezes well for leftovers.

3 - pounds ground beef
1 - 29oz can tomato sauce
2 - 15.5oz cans kidney beans
2 - 15.5oz cans pinto beans
2 - 28oz cans rotel tomatoes and chiles (large cans)
2 - cups chicken broth (or beef broth)
1 - large onion, diced fine
2 - celery stalks, diced
2 - teaspoons cumin
3 - tablespoons chili powder
2 - teaspoons black pepper
2 - teaspoons salt
1 - teaspoon cayenne pepper *(optional)

Brown the ground beef in skillet over medium heat.
Using a fork, crumble the cooked beef into dime sized pieces.
Drain off fat.

In a large crock pot, combine the beef with all the remaining
ingredients. Cook on low heat for 8 hours.

6 (sliced) White onions  
8 cups Beef stock  
1 cup Water 
5 Hamburger buns (or Texas Toast)
10 teaspoons Parmesan cheese 
10 slices Provolone cheese 
2 to 3 teaspoons Salt 
1/4 teaspoon
Black pepper
3 tablespoons Oil 
1/2 teaspoon Garlic powder 

Heat oil in large pot to medium heat. Sauté the onions for 8 to 10 minutes until they're soft.
Add in beef stock, water, garlic powder, salt, and black pepper. Bring to a boil. When boiling, reduce heat and simmer for 45 minutes.
Separate the hamburger buns top and bottom. Cut the crown off the top half, so top and bottom are same size. Then bake at 325ºF for about 20 minutes. These are your When the soup is done, spoon 1 cup into an oven-safe bowl, and place a crouton on top. Lay a slice of provolone cheese on top, and sprinkle 1/2 teaspoon of parmesan cheese over the provolone.
Turn the heat of oven to broil and cook the soup for 5 minutes or so until cheese is melted, and turning golden. Spread another 1/2 teaspoon parmesan on top and serve.

Arby's Sauce (copycat)


Arby's Sauce

1 cup ketchup
1/2 cup apple cider vinegar
1/4 cup brown sugar
1 Tbsp. Worcestershire sauce
1/2 tsp. garlic salt
2 tsp. water
dash tabasco
1/4 tsp. pepper
1/4 tsp. onion powder

Combine all the ingredients in saucepan. Heat on medium until it just starts to boil.
Cool. Refrigerate.



Popeye's Chicken Tenders (copycat)


Popeye's Chicken Tenders

3 to 4 lbs. chicken tenders (strips)
oil for frying
2 Tbsp. white pepper
1 tsp. cayenne
2/3 cup flour
2 tsp. paprika
1 Tbsp. salt
3 eggs, beaten

Mix together the dry ingredients in one bowl.
Beat eggs in second bowl.
Dip chicken in egg and then flour.  Set on rack to dry - about 30 minutes.
Heat oil in deep fryer. Drop in chicken pieces - a few at a time.  Cook to golden brown.



Ultimate Macaroni Salad


Ultimate Macaroni Salad

1 lb. elbow macaroni (I used medium shells), cooked al dente
2 stalks celery, diced
1 green pepper, diced
1/4 cup scallions, diced
1/4 of a red onion, chopped
1/4 cup shredded carrots
4 hard cooked eggs, chopped
1 cup cooked bacon or ham, chopped
1/2 cup diced cucumber

Dressing
2 1/2 cups mayonnaise
1/2 cup sour cream
1/2 cup buttermilk
3 Tbsp. mustard
1/4 cup cider vinegar
1 Tbsp. sugar
salt & pepper, to taste

Cool the macaroni in the refridgerator. Add all the salad ingredients and stir gently.
Whisk together all the dressing ingrediants.
Now, mix the dressing in with the macaroni. Chill until ready to serve.

I served this with copycat Popeye's Chicken Tenders and copycat Arby's Sauce for dipping.

Red Lobster Crab Cakes


Red Lobster Crab Cakes

1/2 tsp. minces garlic
1 Tbsp. minced onion
1 Tbsp. minced celery
2 Tbsp. mayonnaise
1 egg
1/8 tsp. salt
1/8 tsp. white pepper
1 tsp. Dijon mustard
1 tsp. Old Bay seasoning
1/4 c. bread crumbs - plus 
1 lb. lump crabmeat
oil for sauteeing

1.  Combine all ingredients except breadcrumbs and crab.
2.  Gently mix in crab meat and crumbs.
3.  Form into 2 inch ball.  Roll in crumbs and flatten slightly until it's about 3 inches round and 1/2 inch thick. Refrigerate.
4.  Heat oil in skillet.  Cook 2 at a time. Brown on one side for 2 to 3 minutes. Turn and brown on the other side.
5. Turn down heat and simmer for 5 - 8 minutes.
Serve hot.
Makes about 6.


Cheddar Bay Biscuits (Red Lobster)


Cheddar Bay Biscuits  (Red Lobster)

2 c. flour
1 Tbsp. sugar
1 Tbsp. baking powder
2 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. cayenne (optional)
1 c. buttermilk
1/2 c. butter, melted
1 1/2 c. sharp cheddar  cheese, shredded

Topping
3 Tbsp. melted butter
1 Tbsp. chopped parsley
1/2 tsp. garlic powder

Preheat oven to 450 degrees.  Line a baking sheet with parchment.

Combine four, sugar, baking powder, garlic powder, salt and cayenne. Set aside.

Combine buttermilk and melted butter. Add to your dry ingredients. Fold in the cheese.

Using a 1/4 c. measure, scoop onto your baking sheet. Bake for 10 - 12 minutes.

Mix together your topping ingredients. When you take the biscuits out of the oven, you will brush the tops with this.

Makes 10 biscuits.

Durgin Park Baked Beans





Durgin Park Baked Beans

1 lb. dried navy beans
1/2 tsp. baking soda
1/2 lb. salt pork
1/2 medium onion (peeled, but uncut)
4 Tbsp. brown sugar
1/3 c. molasses
1 tsp. dry mustard
1 tsp. salt
1/4 tsp. pepper

Soak beans overnight.

Preheat oven to 325. Place baking soda in Dutch oven and fill halfway with water. Bring to a boil; add beans.  Boil for 10 minutes. Drain beans in colander and run cold water over them. Set aside.

Dice salt pork into 1 inch cubes. Put 1/2 the salt pork on bottom of pot with onion. Put beans in pot. Put in remaining salt pork on top of beans.

Mix together sugar, molasses, mustard, salt and pepper with 3 c. hot water; pour over beans. Cover. Bake for 6 hours. Check periodically for liquid. Add water if needed. DO NOT FLOOD THEM.

This is a copycat recipe from the Durgin Park Restaurant in Boston, Mass. This is exactly what my Grandma would make in her old cast iron stove fueled with coal. She would cook them all night - usually on a cold night in the winter. The aroma when you walked into her house was amazing! Always serve with Boston Brown Bread and Maple Leaf Hot Dogs with some mustard on the side.

Copycat Taco Bell Enchiritos





Copycat Taco Bell Enchiritos

1 lb. ground beef
1/4 c. flour
1 Tbsp. chili powder
1 tsp. salt
1/2 tsp. dried onion
1/2 tsp. paprika
1/4 tsp. onion powder
dash garlic powder
1/2 c. water
1 (16 oz) can refried beans
10 - 12 fajita sized flour tortillas
1/2 c. diced onion
1 (10 oz) can enchilada sauce
2 c. shredded cheese

Combine first 8 ingredients.  Mix thoroughly.

Add beef mixture to water in skillet.  Mix well.  Over medium heat, break up as meat cooks.  Heat 8 to 10 minutes or until browned.  You should not have any large chunks.

Heat the refried beans.  Warm the tortillas.

Spoon 3 Tbsp. beans, 3 Tbsp. beef and some minced onion down the middle of tortilla.  Roll up.

Put in pan; cover with enchilada sauce and cheese. Heat at 350, or until cheese melts.

Cinnabon Cinnamon Rolls





Cinnabon Cinnamon Rolls

Dough
2 pkg. yeast
1 c. warm water
2/3 c. sugar, plus
1 tsp. sugar
1 c. warm milk
2/3 c. butter
2 tsp. salt
2 eggs, beaten
7 c. flour

Filling
1 c. melted butter, divided
1 3/4 c. sugar, divided
3 Tbsp. cinnamon
1 1/2 c. chopped walnuts (optional)
1 1/2 c. raisins (optional)

Glaze
2/3 c. melted butter
4 c. powdered sugar
2 tsp. vanilla
6 Tbsp. hot water

Mix together water, yeast and 1 tsp. sugar.  Set aside.

In a large bowl, mix milk, 2/3 c. sugar, melted butter, salt and eggs; stir well; add yeast mixture. Add half the flour and mix until smooth.  Stir in enough remaining flour until dough is stiff.  Turn out onto board and knead for 5 to 10 minutes. Place in a well-buttered bowl and let rise (covered) for 1 1/2 hours.  Punch down. Let rest for 5 minutes.  Roll out into a 15 x 20 inch rectangle.

Spread dough with 1/2 c. melted butter.  Mix together 1 1/2 c. sugar and the cinnamon; sprinkle over buttered dough.  Sprinkle with nuts and raisins, if desired.  Roll up - jelly roll fashion - from the long side. Pinch edges together.  Cut into 15 slices.

Coat bottom of a 13 x 9 inch pan and an 8 inch pan with remaining butter and sugar.  Place rolls in pans.  Let rise for about 45 minutes.

Preheat oven to 350. Bake for 25 to 30 minutes or until golden brown. Cool slightly.

Meanwhile, mix melted butter, powdered sugar and vanilla; add hot water - 1 Tbsp at a time until glaze reaches spreading consistency.  Spread over rolls.

McDonald's Cinnamon Melts





McDonald's Cinnamon Melts

Dough:
1 pkg. yeast
1/2 c. warm water
1/2 c. sugar
1/2 c. milk
1/3 c. butter, melted
2 eggs
1 tsp. salt
4 c. flour

Filling:
1 c. brown sugar, packed
2 Tbsp. cinnamon
2/3 c. butter, melted

Icing:
1/4 c. butter, softened
4 oz. cream cheese, softened
1 1/2 c. powdered sugar
1 Tbsp. milk
1/2 tsp. vanilla

Dissolve yeast in water.  Let stand about 5 minutes or until foamy.

Combine sugar with milk and butter.  Mix in eggs and salt.  Then mix in 1 c. flour.  When combined add another cup of flour.  Mix in yeast and stir in last 2 cups of flour.  Form into a ball and let rise in a greased bowl for 1 1/2 hours.

Mix filling ingredients and set aside.

Roll dough to 1/2-inch thickness.  Use a pizza cutter and cut dough into 1/2-inch wide strips and then into 1-inch long pieces.

Grease Texas-size muffin tins with softened butter.  Drop 6 pieces of dough into each muffin cup; then put 2 tsp. of filling over the top.  Cover with plastic wrap and let rise for 30 minutes.

Preheat oven to 350.

Bake for 17 to 20 minutes or until light brown.

Mix together icing ingredients.  spoon 1 Tbsp. over the top as soon as muffins are out of the oven.
