Banana Oatmeal Chocolate Chip Cookies




Banana Oatmeal Chocolate Chip Cookies

1 c. shortening
1/2 c. sugar
3/4 c. brown sugar
2 eggs
1 tsp. vanilla
2 medium bananas, mashed
1 tsp. salt
1 tsp. baking soda
1 1/2 tsp. cinnamon
2 c. flour
2 c. oatmeal
6 oz. chocolate chips

Preheat oven to 350 degrees.

Cream shortening, sugars, eggs, vanilla and banana.

Add the dry ingredients.  Mix well.  Stir in chocolate chips.

Drop by heaping tablespoons onto greased cookie sheets.

Bake 8 to 10 minutes.    Makes 3 to 4 dozen.

Banana Pecan Waffles

Banana Pecan Waffles

1 3/4 c. flour
1 Tbsp. sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
1 small banana, mashed
2 eggs
3 Tbsp. butter, melted
1 cup buttermilk
1 tsp. vanilla
1/2 c. chopped pecans

Combine flour, sugar, baking powder, baking soda, cinnamon and salt.

Beat together banana and eggs. Add butter, buttermilk, vanilla and pecans.

Add to flour mixture.  Mix well, but don't overmix.

Spray your waffle iron with vegetable spray and cook according to the manufacturers directions.

Banana Beignets




Banana Beignets

2 Tbsp. oil plus oil for deep frying
1 1/2 c. cake flour
2 tsp. baking powder
1/2 tsp. salt
1 1/4 tsp. cinnamon
1/3 c. plus 1/2 c. sugar
1 egg
1/2 c. milk
1 mashed bananas

Heat oil to 375 degrees.

Mix flour, baking powder, salt, 1/4 tsp. cinnamon and 1/3 c. sugar.
Mix egg, milk, banana and 2 Tbsp. oil.  Combine both until just moistened.
Drop by round teaspoons into hot oil and fry until golden brown - about 15 seconds per side.
Drain on paper towels.

Mix together 1/2 c. sugar and 1 tsp. cinnamon.  Roll beignets in this mixture.

Banana Cream Pie


Banana Cream Pie

1 baked 9 inch pie shell 
3/4 cup sugar
1/3 cup flour
1/4 tsp. salt
2 cups milk
3 egg yolks
2 Tbsp. butter
1 tsp. vanilla
3 good-sized firm bananas

In saucepan, combine sugar, flour, salt & milk.
Cook and stir over medium heat until it boils. Cook for 2 minutes. Remove from heat.
Mix in the egg yolks. Cook for 2 more minutes. Remove from heat.
Add butter and vanilla.  Cool.
Slice half the bananas over bottom of pie crust.
Pour half the pudding on top. Repeat layers.
Top with meringue or whipped cream. Refrigerate.

Six Banana Banana Bread


Six Banana Banana Bread

1/4 cup butter, melted
2 large eggs
3/4 cup sugar
1/4 cup brown sugar
1/4 cup sour cream
1 Tbsp. vanilla
6 medium bananas, mashed (2 1/2 cups)
1 (3.4 oz) package vanilla instant pudding
2 1/4 cups flour
1 1/2 tsp. baking soda
1 tsp. cinnamon
pinch of salt
1 cup mini cinnamon chips

1.  Preheat oven to 350 degrees. Spray a Texas-size muffin pan or a 9 x 5 inch loaf pan.
2.  Melt butter; cool. Add eggs, sugars, sour cream and vanilla. Whisk to combine.
3. Add bananas; stir.
4.  Add pudding mix, flour, baking soda, cinnamon and salt.  Stir to combine.
5.  Spoon enough batter into muffin tins to make them about 3/4 full. Bake for about 28 minutes. For a loaf, pour into pan and bake about 68 minutes. It's done when a toothpick inserted in center comes out clean. Tent with foil the last 15 minutes if it's beginning to get too brown.
6.  Cool in pan for 20 minutes. Then, turn onto rack to finish cooling.

Variations:
For Strawberry-Banana Bread
Add a pint of diced strawberries to the batter.


Another variation is for Apple Pie Muffins (bread).
Instead of the bananas, add 2 1/2 cups of peeled and finely diced apples.
Substitute apple pie spice for the cinnamon. 
I haven't tried that idea yet, but I will as soon as I can. It just sounds so good!

Banana Bread, Bread Pudding


Banana Bread, Bread Pudding 

1 lb. banana bread, cut in 1 inch cubes
1 (8 oz) package cream cheese, softened
1/2 cup powdered sugar
2 cups half & half
1 1/2 tsp. vanilla
3 eggs
1/8 tsp. salt

1.  Preheat oven to 350 degrees.  Spray a baking sheet with non-stick cooking spray. Toast bread cubes for 15 to 20 minutes, turning once. Turn into a greased 8 inch spuare baking dish.

2.  Mix together cream cheese with powdered sugar until smooth. Beat in the half & half, vanilla, eggs and salt.  Mix well.  Pour over the banana bread.

3.  Bake in 350 degree oven for 35 to 40 minutes or until set.
Cool. Serve warm with whipped cream.

Chocolate Banana Bread


Chocolate Banana Bread

1 c. butter, softened
2 c. sugar
4 large eggs
6 bananas, mashed
2 tsp. vanilla
3 c. flour
2 tsp. baking soda
1/4 c. cocoa
1 c. sour cream
1 c. chocolate chips*

Heat oven to 350 degrees.  Grease 2  9x5" loaf pans.
Cream together butter, sugar and eggs.  
Stir in bananas and vanilla.
Add the flour, baking soda and cocoa. Mix well.
Blend in the sour cream and then the chocolate chips.
Pour into pans.  Bake for 60 minutes or until a toothpick comes out clean.

*You could use any kind of chips you'd like. I've used peanut butter chips or white chocolate chips or even cinnamon chips.

Jamaican Jungle Bread





Jamaican Jungle Bread

1 1/2 c. flour
1 c. quick oats
1/2 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/2 c. flaked coconut
1/2 c. chopped nuts
1 c. mashed bananas (3 medium)
1 (8 oz) can crushed pineapple, undrained
1/4 c. vegetable oil
2 eggs

Preheat oven to 350.  Grease a 9 x 5 x 3 inch loaf pan

In a large bowl, stir together first 9 ingredients.

In medium bowl, mix bananas, pineapple, oil and eggs' add all at once to first mixture. Stir just until liquid is absorbed and mixture is thoroughly moisented (do not overmix).  Pour into prepared loaf pan.

Bake for 50 minutes.  Cool in pan for 5 minutes, then remove from pan and cool completely on a wire rack.

Hummingbird Bundt Cake





Hummingbird Bundt Cake

Cake Batter
1 1/2 c. chopped pecans
3 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3 large eggs, beaten
1 3/4 c. mashed ripe bananas (about 4 large)
1 (8 oz) can crushed pineapple (do not drain)
3/4 c. canola oil
1 1/2 tsp. vanilla extract

Glaze
4 oz. cream cheese, cubed and softened
2 c. sifted powdered sugar
1 tsp. vanilla extract
1 to 2 Tbsp. milk

Prepare Cake Batter:  Preheat oven to 350.  Bake pecans in a single layer in a shallow pan for 8 to 10 minutes or until toasted and fragrant, stirring halfway through.

Stir together flour and next 4 ingredients in a large bowl; stir in eggs and next 4 ingredients, stirring just until dry ingredients are moistened.  Sprinkle 1 cup toasted pecans into a greased and floured 14-cup bundt pan. Spoon batter over pecans.

Bake at 350 for 1 hour to 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.  Cool cake on wire rack for 15 minutes; remove from pan and cool completely.

Prepare Glaze:  Process cream cheese, powdered sugar, vanilla and 1 Tbsp. milk in a food processor until well blended.  Add remaining 1 Tbsp. milk, 1 tsp. at a time, processing until smooth.  Immediately pour glaze over cooled cake and sprinkle with remaining 1/2 c. pecan pieces.

Serves 10 to 12.

Chocolate Chip Banana Bread





Chocolate Chip Banana Bread

1/2 c. butter, softened
1 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 large eggs (at room temperature)
3 large, VERY ripe bananas, mashed
1 tsp. vanilla
2 c. flour
1 c. semisweet chocolate chips*
1/2 c. chopped walnuts or pecans

Heat oven to 350 degrees.  Grease a 9 x 5- inch loaf pan.

Beat butter, sugar, baking powder, baking soda and salt in a large bowl with electric mixer until light and fluffy.  Beat in eggs one at a time until blended.  Beat in bananas and vanilla.  With mixer on low speed, gradually beat in flour just until blended.  Stir in chocolate chips and nuts.  Pour into prepared pan.  Bake for 60 to 65 minutes or until a pick inserted in center comes out clean.

Cool in pan on rack for 5 minutes before removing from pan to rack to cool completely.

*Try it with peanut butter chips or butterscotch chips or a combination of different flavors.

Banana Crunch Muffins

1 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3 bananas, mashed
3/4 c. sugar
1 egg
1/3 c. butter, melted
1/3 c. brown sugar
2 Tbsp. flour
1/8 tsp. cinnamon
1 Tbsp. butter

Preheat oven to 375 degrees.  Grease 10 muffin cups.

Mix flour, baking soda, baking powder and salt.  In another bowl beat bananas, sugar, egg and melted butter.  Stir into flour.  Spoon into muffin cups.

Mix together brown sugar, 2 Tbsp. flour and cinnamon.  Cut in 1 Tbsp. butter.  Sprinkle over muffins.

Bake 18-20 minutes or until toothpick comes out clean.
