Enchilada Cheese Sauce
Enchilada Cheese Sauce1/3 c. butter1/3 c. flour3 c. half & half2 c. shredded sharp Cheddar cheese1 (4 oz) can chopped chilis, undrainedsalt & pepper, to tasteIn large saucepan, melt butter on low heat. Whisk in butter; add half & half; bring to a simmer and cook until thickened. Add cheese, chilis, salt and pepper. Cook until thickened.
