Boil potatoes in a saucepan of salted water until tender. Drain and mash potatoes until light and fluffy. Do not add milk or butter while mashing. Season with salt and pepper. Allow potatoes to cool. Generously oil a medium sized ring mold. Fold cheese into mashed potatoes to produce a marble effect. Turn mixture into mold and brush with butter. Bake in preheated 400 F (200 C) oven for 25 minutes or until golden.Loosen potatoes around edges of mold with the point of a knife and invert onto an ovenproof serving platter. Increase heat to broil. Brush potatoes with more butter. Broil in oven until top is crisp and brown. The mold can be filled with cooked vegetables such as sliced carrots or peas. Serves 8 |
