ABM Hamburger Buns


ABM Hamburger Buns

1 cup hot water
2 Tbsp. butter, softened
1 large egg
1/4 cup sugar
3 1/2 cups all-purpose flour
1 1/4 tsp. salt
1 Tbsp. yeast
3 Tbsp. melted butter (for topping)
Sesame or Poppy seeds (optional)

1. Place ingredients in bread machine according to the manufacturers directions.
2.  Set on "Dough" cycle.
3.  When done, remove from machine and divide dough into 8 pieces. This will make large buns.
Flatten into disks. Each piece should weight 3 3/4 ounces.
4.  Place on parchment lined baking sheet. Cover and let rise for 1 hour.
5.  Preheat oven to 375 degrees. Brush buns with half the butter. Sprinkle with seeds. Bake for 18 minutes or until golden.
6.  Remove from oven and brush with more butter. Place buns on rack to cool.

*8 pieces makes large hamburger buns. You can always divide into more if you want smaller buns.


Banana Cream Pie


Banana Cream Pie

1 baked 9 inch pie shell 
3/4 cup sugar
1/3 cup flour
1/4 tsp. salt
2 cups milk
3 egg yolks
2 Tbsp. butter
1 tsp. vanilla
3 good-sized firm bananas

In saucepan, combine sugar, flour, salt & milk.
Cook and stir over medium heat until it boils. Cook for 2 minutes. Remove from heat.
Mix in the egg yolks. Cook for 2 more minutes. Remove from heat.
Add butter and vanilla.  Cool.
Slice half the bananas over bottom of pie crust.
Pour half the pudding on top. Repeat layers.
Top with meringue or whipped cream. Refrigerate.


Blueberry Buttermilk Pancakes


Blueberry Buttermilk Pancakes

2 cups flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 Tbsp. sugar
1/4 tsp. cinnamon
1 cup fresh blueberries
2 cups buttermilk
2 eggs, beaten
1 lemon, zested

1.  Whisk together the flour, baking powder, baking soda, salt, sugar and cinnamon.
2.  Toss blueberries with 3 Tbsp. of the dry ingredients. Set aside.
3.  Combine buttermilk, eggs and lemon zest.
4.  Slowly stir dry ingredients and wet ingredients together. Mix just until combined. There will be small lumps, but don't worry about them.  Carefully, fold in the blueberries. Now, let it rest for 10 minutes.
5.  Heat skillet over medium-high heat. Oil your pan. 
6.  Ladle 1/2 cup batter onto pan. Flip when small bubbles appear on the surface. Cook until golden brown.
7. Serve with butter and blueberry syrup.

Blueberry Syrup

3 cups fresh blueberries
1 cup. packed brown sugar
1/2 cup sugar
1 cup water
1 tsp. lemon juice
1/4 tsp. cinnamon

In saucepan, combine all ingredients. Bring to a boil; cook and stir for 3 minutes. Reduce heat and simmer until thickened - about 20 to 25 minutes. Remove from heat. Serve warm over pancakes. Refrigerate leftovers.


Yorkshire Strata


Yorkshire Strata

1 cup cooked beef (leftover roast works really well!)
1/2 cup cooked, diced potato
1/2 cup cooked, diced carrots
1 cup cooked, diced onion
1/2 cup water
1 1/2 cups gravy, divided
4 tsp. Worcestershire sauce, divided
1 1/2 tsp. onion powder
3/4 tsp. garlic powder
2 Tbsp. butter
1 cup milk
2 eggs
1 cup flour
1/4 tsp. salt
1/8 tsp. pepper

1.  Mix meat, vegetables, water, 1/4 cup gravy, 1 Tbsp. Worcestershire sauce, 1 tsp. onion powder, 1/4 tsp. garlic powder. Set aside. 
2.  Put butter in a 10 inch deep dish pie plate and set in a cold oven.
3.  Turn heat to 425 degrees.
4.  Puree milk, eggs, flour, salt & pepper.
5.  Remove pie plate and pour in the batter.
6.  Spoon meat and vegetables down the middle. 
7. Put back in oven for 30 minutes.
8.  Serve topped with gravy.

Bacon Cheeseburger Macaroni




Bacon Cheeseburger Macaroni

5 slices bacon (I used the thick sliced)
1 lb. ground beef
3 1/2 cups macaroni
1 1/2 cup chicken broth or water
2 cups milk
1/2 tsp. salt
additional 1/4 to 3/4 c. milk, if needed
2 1/2 cups cheddar cheese, shredded
chopped onion
chopped green pepper
chopped green onion

1.  In a large pot, cook the bacon until crisp; remove from pot and drain. 
2. Brown ground beef, onion and green pepper; drain. 
3. In the pot, add macaroni, broth(or water), milk, salt and half the bacon.
4.  Bring to a simmer; cover and cook 10 min., stirring often. If the cooking liquid is used before the macaroni is done, add additional milk. Make sure the macaroni is al dente.
5.  Add 2 cups of the cheese; stir until melted.
6.  Garnish with extra cheese, bacon and chopped green onion.
